Runner Beans with Anchovies recipe

Runner beans are cooked very simply with anchovies and garlic in this easy recipe. Perfect with roast chicken or porchetta.

Ingredients

  • 250g runner beans, trimmed and sliced
  • 1 garlic clove, crushed
  • 4 tbsp. water
  • 1 tsp. lemon juice
  • 4 anchovy fillets with oil
  • Black pepper to taste

Directions

  1. Put the runner beans, garlic, water and lemon juice into a saucepan. Cover and bring to the boil, then cook for 8-10 minutes, stirring occasionally until tender.

  2. Mash the anchovies with 1 tbsp. oil in a small bowl. Add to the beans with a good pinch of pepper, and toss to warm through. Serve immediately.

Not a big fan of anchovies? Get the salty hit with capers or pancetta instead. Recipe serves 2.
