Runner beans are cooked very simply with anchovies and garlic in this easy recipe. Perfect with roast chicken or porchetta.
- 250g runner beans, trimmed and sliced
- 1 garlic clove, crushed
- 4 tbsp. water
- 1 tsp. lemon juice
- 4 anchovy fillets with oil
- Black pepper to taste
Put the runner beans, garlic, water and lemon juice into a saucepan. Cover and bring to the boil, then cook for 8-10 minutes, stirring occasionally until tender.
Mash the anchovies with 1 tbsp. oil in a small bowl. Add to the beans with a good pinch of pepper, and toss to warm through. Serve immediately.
