Runner Beans and Broccoli with Hazelnut Butter recipe

Easy peasy yet super delicious, this dish uses just 5 ingredients - a brilliant way to make the most out of some simple seasonal veggies.


  • 250g runner beans, trimmed and sliced
  • 250g broccoli, cut into florets
  • 25g butter
  • 25g blanched hazelnuts, chopped
  • Salt and pepper


  1. Bring a pot of water to the boil. Add the beans and boil for 2 minutes, then add the broccoli and boil for a further 3-4 minutes or until tender.

  2. Drain the veg. Meanwhile, melt the butter over a low heat in a large frying pan. Add the hazelnuts and toast until just golden, then add the beans and broccoli. Toss to combine, then season well.

If you like, you could use walnuts or pecans instead of the hazelnuts and add a few chunks of blue cheese to finish the dish. Recipe serves 4.
