This recipe is much easier to make than you might think and it tastes like you've been in the kitchen for hours. In reality, this dish takes only 10 minutes to throw together so it's perfect for midweek.
- 225g dried spaghetti
- 200g smoked salmon
- 1 onion
- 1 garlic clove
- 150g mushrooms
- 175g basil pesto (shop-bought or homemade)
- 3 tbsp. tomato puree
- 4 tbsp. pasta water (reserved when you drain the pasta)
- 1 tbsp. freshly chopped basil
- Drop of oil
Finely chop the onion, mince the garlic clove and thinly slice the mushrooms. Bring a pot of salted water to the boil and drop in the pasta. Cook according to packet instructions.
Heat a little oil in a frying pan and add the onion, basil and mushrooms. Cook until tender, then add the tomato puree and cook for a minute or two.
Add the pesto, pasta water, smoked salmon, and most of the fresh basil. Stir well and then simmer gently for 10 minutes.
Drain the pasta and add to the sauce, then toss to coat. Sprinkle with the rest of the basil to serve.
