Coriander has a wonderful savoury edge and it works brilliantly with salmon. In this recipe, coriander combines with butter and fresh green chilli to create a spiky yet rich sauce that complements the flavour of the salmon perfectly.
- 1kg salmon
- 50g butter
- 40g coriander leaves, chopped
- 1 green chilli
- Salt and pepper
Preheat the BBQ for a high heat. Grease one side of a sheet of foil.
Slice the chilli in half, remove the seeds with the back of a knife and finely dice the flesh. Melt the butter in a saucepan, take off the heat and stir in the coriander, chilli and black pepper to taste.
Put the salmon onto the foil, season, wrap up and then bake on the BBQ for 15 minutes or until flaking. Serve with the sauce spooned over.
