Salmon, Pea and Mint Fishcakes recipe

Pea and mint are a natural pairing and in this recipe, they're paired with salmon for a delicious, nutritious and ridiculously easy recipe. Tinned salmon is combined with peas, mash, mint and tartar sauce and that's it! Enjoy with sweet potato wedges.


  • 500g mash
  • 400g tin salmon, drained, bones removed
  • 140g frozen peas, defrosted
  • 1 tbsp. tartar sauce
  • Small handful mint leaves, finely chopped
  • 3 tbsp. plain flour
  • Salt and pepper


  1. Combine the mash, flaked salmon, peas, tartar sauce, mint and salt and pepper. Shape into 8 rough fishcakes.

  2. Dust the fishcakes in the flour. Heat oil in a frying pan and fry the fishcakes until golden and crisp, around 4-5 minutes on either side.

Use mayo if you don't have any tartar sauce - it's just to bind everything together. Recipe serves 8.
