Creamy Salmon with Peas, Beans and Leeks recipe

Preparation Time: 10 minutes | Cooking Time: 30 minutes

This one-pot salmon dish is the perfect mid-week meal as it takes just 30 minutes to cook in just one pot - meaning less washing up! Serve it up alongside mashed or roasted potatoes.


  • 4 salmon fillets, boneless
  • 1 leek
  • 140g frozen peas
  • 140g podded green beans
  • 100g creme fraiche
  • 250ml chicken stock
  • Small bunch of chives
  • Salt and pepper to taste


  1. Thinly slice the leek. In a large saucepan, heat a little oil and add the leek. Cook gently for 5-10 minutes or until softened and sweet.

  2. Add the stock and simmer until slightly reduced, add the creme fraiche and a good pinch of seasoning and simmer for a little bit longer.

  3. Stir in the chives and the beans and peas. Add the salmon fillets. Cover and simmer for 12-15 minutes or until the salmon is tender and cooked through. Season to taste before serving.

For a little extra green colour and extra goodness, add some spinach to the pot for the last few minutes of cooking. Recipe serves 4.
