This fab Brazilian dish uses some traditional flavours and textures to create a warming, filling dish that the whole family will enjoy.
- 600g salt cod
- 240ml olive oil
- 4 onions, sliced
- 1 tsp. freshly chopped parsley
- 3 garlic cloves, minced
- 400g potatoes, pre-cooked, sliced
- 3 hard-boiled eggs, sliced
- 12 green olives, thinly sliced
Soak the cod for 24 hours, changing the water 4 or 5 times. Drain, rinse, pat dry and then cook in simmering water for 5 minutes. Take the fish out of the water, remove the bones and then shred the fish.
Preheat oven to 180C. Heat the oil in a large saucepan and add the onion, garlic and parsley. Cook until the onions are very soft and tender, add the cod and potatoes and cook for 10 minutes or until the potatoes start to turn golden. Pour into a large baking dish and bake for 10-15 minutes.
To serve, sprinkle with eggs and olives.
