Salt and Pepper Salmon with Sweet Chilli Sauce recipe

Salmon is pepped up with Chinese five spice, cracked peppercorns and salt in this yum recipe. It's served with a ridiculously simple sweet chilli sauce that'll fast become your go-to party dip.


  • 4 salmon fillets, boneless
  • 2 tsp. cracked black pepper
  • 2 tsp. five spice powder
  • 1 tsp. sea salt
  • 1 tbsp. corn flour
  • Sesame oil
  • 200ml rice wine vinegar
  • 100g caster sugar
  • 1 shallot
  • 1 tbsp. dried red chilli flakes


  1. Mix the corn flour, sea salt, five spice and black pepper together. Coat the salmon fillets in the mixture. Fry in sesame oil for 4-5 minutes on either side or until golden, crisp and flaking gently.

  2. Make the sauce. Put the vinegar and sugar into a pan and bring to the boil. Reduce to a simmer and cook for 5 minutes. Take off the heat and then stir in the shallot and chilli flakes. Spoon over the salmon to serve.

You can crack your own peppercorns in a mortar and pestle if you prefer. Recipe serves 4.
