Samphire Dip recipe

Preparation Time: 10 minutes

This yummy dip is a little bit like a pesto and a little bit like a white sauce. You can serve it as a dip with chips and crackers, or you can serve it as a sauce with your favourite white fish or even chicken.


  • 200g young samphire, fresh if possible
  • 3 tbsp. extra-virgin olive oil
  • 250g creme fraiche
  • Salt and pepper
  • 1/2 tsp. lemon zest
  • Lemon juice


  1. Wash samphire and drain well. Place into a food processor and blend until pureed. Add the oil, while the machine is still running, and whiz until combined. Tip into a bowl.

  2. Stir the creme fraiche into the samphire mix, season with salt and pepper, stir in the lemon zest and add lemon juice to taste. If you want a thicker dip, simply fold in more creme fraiche.

You could add a little parsley or some chives to the samphire dip if you like for a little fresh flavour. Recipe serves 4 as a dip and 2 as a sauce.
