This yummy dip is a little bit like a pesto and a little bit like a white sauce. You can serve it as a dip with chips and crackers, or you can serve it as a sauce with your favourite white fish or even chicken.
- 200g young samphire, fresh if possible
- 3 tbsp. extra-virgin olive oil
- 250g creme fraiche
- Salt and pepper
- 1/2 tsp. lemon zest
- Lemon juice
Wash samphire and drain well. Place into a food processor and blend until pureed. Add the oil, while the machine is still running, and whiz until combined. Tip into a bowl.
Stir the creme fraiche into the samphire mix, season with salt and pepper, stir in the lemon zest and add lemon juice to taste. If you want a thicker dip, simply fold in more creme fraiche.
