A cheerful and delicious way to enjoy samphire, this simple recipe is light, bright and perfect for lunch. Serve with your favourite tomato sauce and a side of crispy bacon.
- 100g samphire
- 6 eggs
- Bunch spring onions
- 3 tbsp. butter + 1 tbsp. oil
- Salt and pepper
Thinly slice the spring onions on the diagonal. Wash and chop the samphire. Whisk eggs with salt and pepper.
Heat half the oil and butter in a frying pan. Fry the onions and samphire until tender for around 2-3 minutes.
Dot the rest of the oil and butter over the bottom of an oven dish. Scatter half the cooked samphire and onions over the bottom and pour over the eggs. Bake in a 200C oven for 15-25 minutes until puffed up and golden. Sprinkle the rest of the onions and samphire over the top and fold in half to serve.
