Samphire Tempura recipe

Preparation Time: 10 minutes | Cooking Time: 5 minutes

In this recipe, samphire strands are coated in a simple tempura batter, then ried until golden and crisp, sprinkled with sea salt and served with lemon wedges. Delicious as a snack.


  • 150g samphire
  • 1 lemon
  • Vegetable oil
  • 1 egg
  • 60g plain flour
  • 100ml ice cold water
  • 1/4 tsp. cayenne pepper


  1. Wash the samphire and pat dry.

  2. Whisk the egg and flour together until smooth. Add cayenne, then whisk in the water until the batter is smooth.

  3. Heat the oil to 160C. Place the samphire into the batter, then remove from the batter, letting the excess run off, then drop the samphire into the oil a few strands at a time. Fry until crisp, around 1-2 minutes, then drain on kitchen paper. Serve with the lemon chopped into wedges and a sprinkle of sea salt.

You can serve this samphire with a spicy tomato salsa, or you could serve it with a creamy chive dip. Recipe serves 2.
