Serve this delicious savoury blueberry sauce with chicken, salmon, duck breasts, pork or even venison. It's delicious, tangy and rich at the same time and utterly yummy.
- 185ml chicken stock
- 60ml orange juice
- 60ml balsamic vinegar
- 1 tbsp. corn flour
- 1 tbsp. honey
- 150g blueberries
- 1 tbsp. freshly chopped chives
- Salt and pepper
Heat 2/3 of the chicken stock with the orange juice, balsamic and honey. Bring to the boil, reduce to a simmer and keep cooking. Dissolve the cornflour in the rest of the chicken stock and add to the ingredients in the pan.
Bring back to the boil, reduce to a simmer and cook until the sauce reduces down to your tastes and is thickened. Add the berries and chives and season to taste. Cook for 2-3 minutes.
