This delicious savoury cheesecake is completely delicious and really unusual - slice it up and serve it with a side salad and a good drizzle of balsamic dressing.
- 375g self raising flour
- 225ml groundnut oil
- 250g halloumi, grated
- 6 eggs
- 2 tsp. baking powder
- 1 tsp. freshly chopped mint
- 125g raisins, dredged in 2 tbsp. of the flour
- 2 tbsp. sugar
- 225ml milk
- 3 tbsp. sesame seeds
Grease and line a spring form cake tin of about 8 inches wide.
Beat the eggs using an electric mix, gradually whisking in the oil as you go. Combine the baking powder, mint, sugar and flour.
Mix 1/3 of the flour mix into the eggs, followed by 1/3 of the milk and keep going until all of the flour and milk are well combined. Fold in the raisins and halloumi. Pour into the cake tin.
Bake for 40 minuets, then sprinkle the sesame seeds on top. Bake for another 10 minutes or until the golden and springy in the middle. Cool in the tin for 10 minutes, then remove the tin and slice.
