Scotch Pancakes recipe

Scotch pancakes are thicker and fluffier than traditional pancakes and make for a fantastic breakfast - plus, they use just four ingredients. Here's how to make them.


  • 50g caster sugar
  • 100g plain flour
  • 1 egg
  • Dash of milk


  1. Sift together the sugar and flour into a large bowl. Whisk in the egg - the mix will be lumpy so don't worry.

  2. Pour in enough milk to create a batter that's thick, around the same consistency of double cream.

  3. Grease the frying pan, then add a small ladleful of batter to the pan. When bubbles appear on the surface of the pancake, flip and cook until golden brown.

If you like, stud the surface of the pancakes with blueberries before flipping for blueberry pancakes. Recipe makes around 6 pancakes.
