Paella is a traditional Spanish dish prepared with rice, saffron stock and seafood. In this recipe, everything is cooked on the stove in one pot, making it an excellent choice for a dinner party if you want to cut down on the washing up!
- 2 medium onions
- 200g chorizo sausage
- 600g chicken breast
- 150g prawns, peeled, deveined and cleaned
- 300g paella rice
- Salt and pepper
- Olive oil
- 25g each prepared clams, mussels and calamari rings
- 100ml white wine
- 100g tomatoes
- 400ml chicken stock mixed with 1 pinch saffron strands
- 1 tsp. sweet paprika
- 100g peas
Finely dice the onion. Finely chop the chorizo sausage. Dice the chicken breasts. Chop the tomatoes.
Heat the oil in a large deep frying pan. Add the onion and fry until golden. Add the chorizo and fry until it releases oils, then add the chicken and fry until sealed. Season with salt and pepper to taste.
Add the paella rice, prawns, clams, mussels and calamari. Cook until the rice starts to turn clear around the edges of each grain. Add the wine and cook until it has all absorbed into the rice.
Add the tomatoes, chicken stock and paprika. Stir well. Simmer for around 20 minutes, adding the peas after about 15 minutes. Continue simmering until the rice has absorbed all the stock and the rice is tender.
Before serving, cover and leave to sit for 10 minutes.
