Italian Donuts (Sfingi) recipe

These delicious donuts are made from ricotta, caster sugar and vanilla flavouring and they're soaked with honey and icing sugar before being served warm. With a creamy texture on the inside and a crispy yet soft outside, these donuts are a really yummy change from the usual English donuts.

Ingredients

  • 450g ricotta cheese
  • 125g plain flour
  • 2 eggs
  • 2 tbsp. caster sugar
  • 4 tbsp. honey
  • 4 tbsp. icing sugar
  • 1 1/2 tbsp. baking powder
  • 2 tsp. vanilla extract
  • Vegetable oil for frying

Directions

  1. Sieve together the baking powder and flour and set to one side.

  2. In another bowl, combine the ricotta, eggs, sugar and vanilla extract until smooth.

  3. Mix in half the flour and baking powder mixture, then add enough of the remaining flour to make a thick batter. Let the batter rest for 1 hour.

  4. Heat oil until batter dropped into oil starts to sizzle, then drop the batter into the fryer (or pan) by the teaspoonful and cook until golden brown.

  5. Put the donuts on a plate and drizzle with honey and dust with icing sugar before serving.

A nice touch would be to sprinkle these donuts with pine nuts. You could also crush some mint leaves with the sugar and dust this over the donuts for a distinctly Italian feel. This recipe serves 15.
