These delicious muffins are packed with dried fruits, stuffed with marzipan and topped with a light orange water icing. Really delicious and really easy, these muffins are a fantastic Easter treat.
- 250g mixed fruit + zest and juice of 1 orange, microwaved for 2 minutes
- 300g self-raising flour
- 175g butter and golden caster sugar
- 3 eggs
- 5 tbsp. milk
- 175g marzipan
- 1 tsp. mixed spice
- 1/4 tsp. nutmeg
- 200g icing sugar
- 2 tbsp. orange juice
Preheat the oven to 160C and grease or line a 12-hole muffin tin.
Beat together the butter and sugar until pale and fluffy, then beat in the eggs one at a time, then stir in the flour, mixed spice and nutmeg, then thin with milk. Fold in the fruit and juices.
Divide the marzipan into 12 and roll into balls. Divide half the batter between the muffin liners and put marzipan on top of each one. Top with the rest of the batter, then bake for 25-30 minutes. Leave to cool.
Mix the icing sugar and orange juice together. Once runny, spoon onto the muffins.
