Simple Chocolate Cupcakes recipe

Preparation Time: 15 minutes | Cooking Time: 20 minutes

These simple choccy cupcakes have a soft chocolate sponge studded with chocolate chips, and a soft chocolate buttercream icing. Great for parties, or just as a mid-afternoon snack!

  • 115g butter
  • 115g caster sugar
  • 2 eggs
  • 115g self-raising flour
  • 30g cocoa powder
  • 100g chocolate chips
  • 135g icing sugar
  • 55g butter
  • 30g cocoa powder

  1. Grease 12 cupcake liners and place into a cupcake/baking tin.

  2. Beat together the butter and caster sugar until pale and fluffy. Add the eggs one at a time, beating well after each addition, then sieve in the flour and 30g cocoa powder. Stir well to combine, fold in the chocolate chips then divide between the prepared cupcake liners.

  3. Bake the cupcakes for 15-20 minutes at 180C until a skewer inserted into the centre of a cake comes out clean. Leave to cool on a wire rack.

  4. Make the icing. Soften the butter and gradually beat in the cocoa powder, then the sugar, until you reach the desired consistency. Use to ice the cupcakes.

For extra chocolatey cupcakes, garnish the iced cupcakes with some chocolate buttons. Recipe makes 12 cupcakes.
