Simple chocolate mousse is the perfect ending to any meal - and this version is particularly delicious, made with just a few ingredients. Garnish with fresh berries and a little cream.
- 500ml whipping cream
- 150g milk chocolate
- 150g dark chocolate
- 4 tbsp. icing sugar
- 2 eggs
Place the cream into a bowl and whisk with an electric mixer until soft, firm peaks form. Break the chocolate into pieces and place into a bowl over a pan of barely simmering water. Stir until melted.
When the cream is firm, beat in the sugar, being careful not to knock the air out. Leave the chocolate to cool slightly and then beat in the eggs. Fold a little of the cream into the chocolate, then carefully fold the rest in using figure-8 movements. Divide between 4 ramekins and leave to set in the fridge.
