This is probably one of the most simple roast partridge recipes - using just butter, salt and pepper, to create a soft, tender and wonderfully flavourful partridge dish.
- 4 small partridges, oven ready
- 4 tbsp. butter mixed with salt and pepper
- 100g butter + 20ml veg oil
Preheat oven to 200C. Heat a deep baking tin on the hob. Put 1 tbsp. of seasoned butter into the cavity of each bird and rub it around.
Heat the butter and oil together in the baking tin. When melted, fry the birds on all sides in the fat until browned. Put them into the oven breast side down and roast for 30 minutes until golden, basting with the butter and oil often. When they have been cooking for 15 minutes, turn the birds over so they are breast side up.
