Simple Roasted Aubergines recipe

Preparation Time: 10 minutes | Cooking Time: 30 minutes

In this recipe, aubergines are roasted in the oven with garlic and olive oil until slightly charred and golden brown. They are super simple, but super delicious - they are are a great alternative to mashed potatoes and they taste wonderful with grilled chicken.


  • 2 large aubergines
  • 4 tbsp. olive oil
  • 2 garlic cloves
  • Salt and pepper


  1. Preheat oven to 220C. Thinly slice garlic cloves. Slice the aubergines in half lengthways and make slits in the flesh with a sharp knife. Add garlic slivers to the slits.

  2. Drizzle with oil and salt and pepper. Bake for 30 minutes, covering with foil halfway through to prevent them from browning too much.

If you want to, scoop the aubergine out and mash to serve, or serve it as it is inside the skin. Recipe serves 2-4.
