A super clever one-pot dish that's perfect for Sunday dinner, in this recipe, pork, sweet potatoes and garlic are simmered very slowly in chicken stock until tender and delicious. To serve, thinly slice and pour over the reduced cooking stock.
- 1 x 900g boneless pork roasting joint
- 4 sweet potatoes
- 1 onion
- 6 garlic cloves
- Salt and pepper
- 400ml chicken stock
- 1 tbsp. oil
Season the joint with salt and pepper all over. Heat oil in a frying pan and brown the meat on all sides. Set to one side.
Peel and quarter the sweet potatoes. Peel and quarter the onion and peel the garlic, but leave the cloves whole. Layer the potatoes, onion and garlic in the slow cooker and put the roast on top. Pour over the chicken stock.
Cover and cook on a low heat for 6-8 hours or until the pork is tender.
