Slow Cooker Lamb Rogan Josh recipe

Preparation Time: 30 minutes | Cooking Time: 4 hours

This gently spiced lamb rogan josh is fragrant and creamy - not too hot and not too mild, but somewhere in the middle! Serve over basmati rice or with a soft floury flatbread.

  • 1kg leg of lamb, boned, trimmed
  • 1 tbsp. oil
  • 2 onions, finely sliced
  • 125g plain natural yoghurt
  • 1 tbsp. ground coriander
  • 1 tsp. chilli powder
  • 2 tsp. ground cumin
  • 1 tsp. ground cardamom
  • 1 tsp. ground turmeric
  • 1/2 tsp. ground cloves
  • 3 garlic cloves, crushed
  • 1 tbsp. fresh ginger, grated
  • 1 x 400g tin chopped tomatoes
  • 1 tsp. garam masala
  • 1 tsp. salt
  • 8 tbsp. dry lentils
  • 225ml water
  • Small handful finely chopped coriander

  1. Chop lamb into large cubes. Heat oil in a large pot and add the onions. Fry until softened and browned, then add the yoghurt, chilli powder, coriander, cumin, cardamom, cloves, turmeric, crushed garlic and grated ginger. Stir in the tomatoes and salt, cover, then simmer for 5 minutes.

  2. Pour into the slow cooker and cook on low, covered, for 3-4 hours. Halfway through cooking, stir in the garam masala, lentils and water. Taste and season before serving and stir in the coriander.

For extra heat, add a fresh red or green chilli. Recipe serves 6.
