Preparation Time: 30 minutes | Cooking Time: 8 hours

Lamb shanks are cooked very slowly in red wine, beef stock, veggies, tomato puree and a little bit of brown sugar until meltingly tender and soft. Serve with mashed potato and roasted veggies.

  • 4 lamb shanks
  • 100ml red wine
  • 150ml beef stock
  • 2 celery stalks
  • 1 onion
  • 1 carrot
  • 2-3 mushrooms
  • 2 tbsp. tomato puree
  • 2 tbsp. brown sugar
  • 1/2 tsp. each salt and black pepper
  • 1 bay leaf
  • 2 tbsp. oil
  • 1 tbsp. corn flour
  • Rosemary sprig

  1. Chop the celery, carrot, onion and mushrooms into chunks. Heat the oil in a large frying pan and add the lamb shanks. Fry until browned on all sides. Put the veggies and bay leaf into the base of the slow cooker.

  2. Put the lamb shanks on top of the veg. Season with the salt and pepper. Combine the wine, stock, puree and sugar together and then pour over the lamb. Add the rosemary sprig, cover, then cook on low for 8 hours.

  3. Lift the lamb shanks from the slow cooker and pour the liquid into a saucepan. Mix the corn flour with 1 tbsp. water and add to the liquid in the pan. Stir, then simmer until thickened. Pour over the lamb to serve.

You can use something a herb like thyme instead of rosemary if you prefer. Recipe serves 4.
