This full-flavoured, filling and satisfying salad is packed with flavour and just perfect for lunchboxes. Brown rice, runner beans, butter beans, cumin, garlic and paprika combine to create a surprising substantial salad.
- 200g brown rice
- 400g can butter beans, drained, rinsed
- 200g runner beans, trimmed and sliced
- 3 tbsp. oil
- 3 garlic cloves, sliced
- 1/2 tsp. cumin
- 1 tsp. smoked paprika
- Salt and black pepper
Rinse the rice under cold running water, then cover with water, bring to the boil and cook for 20-25 minutes or until tender. Drain.
Heat 2 tbsp. of the oil in a large frying pan. Add the beans and seasoning and cook for 4-5 minutes or until nearly tender. Stir in the garlic, cook for 2-3 minutes until fragrant, then add the beans and rice and cook until warmed through.
Add the oil, cumin and paprika. Cook for 2-3 minutes and serve warm. Taste and add more seasoning if necessary.
