Smoky Runner and Butter Bean Salad recipe

This full-flavoured, filling and satisfying salad is packed with flavour and just perfect for lunchboxes. Brown rice, runner beans, butter beans, cumin, garlic and paprika combine to create a surprising substantial salad.


  • 200g brown rice
  • 400g can butter beans, drained, rinsed
  • 200g runner beans, trimmed and sliced
  • 3 tbsp. oil
  • 3 garlic cloves, sliced
  • 1/2 tsp. cumin
  • 1 tsp. smoked paprika
  • Salt and black pepper


  1. Rinse the rice under cold running water, then cover with water, bring to the boil and cook for 20-25 minutes or until tender. Drain.

  2. Heat 2 tbsp. of the oil in a large frying pan. Add the beans and seasoning and cook for 4-5 minutes or until nearly tender. Stir in the garlic, cook for 2-3 minutes until fragrant, then add the beans and rice and cook until warmed through.

  3. Add the oil, cumin and paprika. Cook for 2-3 minutes and serve warm. Taste and add more seasoning if necessary.

For a spicier dish, add 1/2 tsp. dried red chilli flakes. Recipe serves 4.
