This delicious and healthy salsa is perfect with everything from halloumi to griddled meats. Either make it raw, or use roasted pepper from a jar and slow roast the tomatoes before whizzing into the salsa.
- 1 red onion
- 20g coriander
- 125g cherry tomatoes
- 1/2 red pepper, seeds removed
- 3 tbsp. extra-virgin olive oil
- 2 tbsp. red wine vinegar
- 1 1/2 tsp. mild sweet paprika
- Salt and pepper
1. Roughly chop all ingredients, pop everything into a blender, then pulse until roughly chopped together. To serve, sprinkle with a little extra chopped coriander.
