This clever version of Southern fried chicken is a great copy of the restaurant fave - just serve with your favourite side, like home baked wedges or a big salad.
- 200g plain flour
- 1 tbsp. each salt, mustard powder, thyme and ginger
- 1 tsp. each garlic granules or salt, basil and oregano
- 4 tbsp. paprika
- 1 tbsp. ground pepper
- 8 chicken portions
- 1 egg
Combine flour, salt, mustard, thyme, ginger, garlic, basil, oregano, paprika and pepper in a large bowl. Beat the egg, dip the chicken in the egg, then into the flour mix.
Heat oil in a large frying pan. Add the chicken and fry on all sides until crisp, then put onto a baking tray and into the oven at 190C for 20-30 minutes or until the chicken is cooked through.
