Spanish Runner Beans with Tomatoes and Pine Nuts recipe

Runner beans are simmered with garlic, tomatoes, a bay leaf and a touch of lemon juice in this delectable side dish, finished off with some toasted pine nuts for extra crunch.

Ingredients

  • 2 tbsp. olive oil
  • 1kg runner beans, trimmed and sliced into inch long pieces
  • 2 x 400g tin chopped tomatoes
  • 2 garlic cloves, crushed
  • 1 tbsp. snipped chives
  • 2 tbsp. lemon juice
  • 3 tbsp. toasted pine nuts
  • 1 bay leaf
  • Salt and black pepper
  • Pinch of sugar

Directions

  1. Heat the oil in a large frying pan. Add the garlic and fry for a minute or two, then add the beans and stir fry for 4-5 minutes or until nearly tender.

  2. Add the tomatoes, lemon juice, chives, bay leaf, salt, pepper and sugar.

  3. Stir to combine, then cover and simmer over a low heat for 20-25 minutes or until thick and rich. To serve, remove the bay leaf and sprinkle with the pine nuts.

For a spicier dish, add 100g fried chorizo to the recipe. Recipe serves 6.
