Runner beans are simmered with garlic, tomatoes, a bay leaf and a touch of lemon juice in this delectable side dish, finished off with some toasted pine nuts for extra crunch.
- 2 tbsp. olive oil
- 1kg runner beans, trimmed and sliced into inch long pieces
- 2 x 400g tin chopped tomatoes
- 2 garlic cloves, crushed
- 1 tbsp. snipped chives
- 2 tbsp. lemon juice
- 3 tbsp. toasted pine nuts
- 1 bay leaf
- Salt and black pepper
- Pinch of sugar
Heat the oil in a large frying pan. Add the garlic and fry for a minute or two, then add the beans and stir fry for 4-5 minutes or until nearly tender.
Add the tomatoes, lemon juice, chives, bay leaf, salt, pepper and sugar.
Stir to combine, then cover and simmer over a low heat for 20-25 minutes or until thick and rich. To serve, remove the bay leaf and sprinkle with the pine nuts.
