This is a lovely twist on a traditional wintery pudding – the pomegranate really zings and makes the whole crumble pop with flavour. Try with some orange flavoured cream.
½ pomegranate, deseeded
115g dark brown sugar
1 tbsp. cinnamon
1 tsp. nutmeg
40g porridge oats
60g plain flour
115g melted butter
100g caster sugar
Preheat the oven to 190C/gas mark 5. Grease and line a 23cm baking tin.
Peel and core the apples. Chop them into thin slices.
Remove the skin and light membrane from the pomegranate.
Toss the apples and pomegranate together in a large bowl. Sprinkle the brown sugar over the fruit. Add in the nutmeg and cinnamon and mix together well. Put the fruit into the baking tin.
Mix the porridge oats, flour, butter and sugar together in a bowl until it resembles breadcrumbs.
Cook in the oven for 40 minutes. Leave for ten minutes and then serve.
