Spiced Apple and Sultana Pancakes recipe

These fabulous pancakes use apple puree, sultanas and cinnamon to create a delicious batter mix that's just perfect for breakfast. This recipe makes for a tasty dessert, too, when topped with some vanilla ice cream and a drizzle of runny honey.


  • 250g apple sauce or puree
  • 2 eggs
  • 2 tsp. caster sugar
  • 1 tsp. ground cinnamon
  • 125g plain flour
  • 75g wholemeal flour
  • 2 tsp. baking powder
  • 2 tsp. vanilla extract
  • 75g sultanas


  1. Whisk together the apple sauce, eggs and vanilla, then sift in the sugar, cinnamon, plain flour, wholemeal flour and baking powder. Stir to combine, then fold in the sultanas.

  2. Form the batter into small cakes. To cook, heat a frying pan over a medium heat and add a knob of butter. Once melted, add the cakes and fry for 2-3 minutes on either side or until golden brown and cooked through.

If you like, omit the spice and sultanas and add some white chocolate chips for a sweeter pancake. Recipe makes around 6 pancakes.
