In this recipe, avocado, spices and buttermilk combine to enrich a basic bread dough. It's a little bit like a banana bread, but made with avocado instead. Pecans, raising and orange zest add extra zest and a delicious flavour to the bread.
- 375g caster sugar
- 350g ripe, mashed avocado
- 175g buttermilk
- 3 eggs
- 325g plain flour
- 115g softened butter
- 1 1/2 tsp. bicarbonate of soda
- 1 tsp. baking powder
- 3/4 tsp. each salt, cinnamon and allspice
- 80g each pecans and raisins
- 1 tbsp. orange zest
Preheat oven to 180C and grease 2 loaf tins.
Cream together the butter and sugar until pale and fluffy. Beat in the eggs one at a time, adding a bit of the flour if the mixture threatens to curdle. Stir in the avocado and buttermilk and fold in the orange zest.
Sift together the flour, bicarb, baking powder, salt, cinnamon and allspice. Stir into the wet mix until just combined and fold in the pecans and raisins then divide between the two baking tins.
Bake for 1 hour or until a skewer inserted into the centre of the loaf comes out clean, then cool in the tins for 20 minutes before turning out and serving.
