This simple broad bean recipe is perfect for serving on warmed pitta breads with salad and a dollop of natural yoghurt. Broad beans are mashed, fried with oil, tomatoes, onions, garlic and seasonings. Alternatively, you can form the mixture into patties to make burgers.
- 600g broad beans, tinned
- 1 onion
- 2 garlic cloves
- 2 small tomatoes
- 50ml olive oil
- Salt and pepper
- 1/2 tsp. cumin
- 1/2 tsp. dried chilli flakes, or to taste
Prepare broad beans as needed. Finely dice the onion and mince the garlic cloves. Chop the tomatoes. In a bowl, mash the broad beans roughly with a fork.
Heat a frying pan over a medium heat, then add the broad beans and dry fry for 30-50 seconds. Drizzle with oil, then stir in the onion, garlic, tomatoes, cumin, chilli, salt and pepper. Stir around in the pan, then fry over a medium heat for 20 minutes, or until tender and slightly golden.
