Spiced Broad Bean Mash recipe

Preparation Time: 10 minutes | Cooking Time: 25 minutes

This simple broad bean recipe is perfect for serving on warmed pitta breads with salad and a dollop of natural yoghurt. Broad beans are mashed, fried with oil, tomatoes, onions, garlic and seasonings. Alternatively, you can form the mixture into patties to make burgers.

  • 600g broad beans, tinned
  • 1 onion
  • 2 garlic cloves
  • 2 small tomatoes
  • 50ml olive oil
  • Salt and pepper
  • 1/2 tsp. cumin
  • 1/2 tsp. dried chilli flakes, or to taste

  1. Prepare broad beans as needed. Finely dice the onion and mince the garlic cloves. Chop the tomatoes. In a bowl, mash the broad beans roughly with a fork.

  2. Heat a frying pan over a medium heat, then add the broad beans and dry fry for 30-50 seconds. Drizzle with oil, then stir in the onion, garlic, tomatoes, cumin, chilli, salt and pepper. Stir around in the pan, then fry over a medium heat for 20 minutes, or until tender and slightly golden.

Add some freshly chopped chilli if desired for a hit of fresh heat. Recipe serves 4.
