This chocolate pudding isn't strictly a Christmas pudding, but the clove and cinnamon spices make it extra festive. It has a light, gooey texture, making it super decadent. A great alternative to a traditional Christmas pudding.
- 10 eggs
- 300g caster sugar
- 120g ground almonds
- 80g dark chocolate, melted over a double boiler
- 60g self-raising flour
- 2 tsp. ground cinnamon
- 1/4 tsp. cloves
- 1/4 tsp. salt
Carefully separate the eggs. Beat the egg yolks with the sugar using an electric whisk until pale, frothy and increased in volume.
Stir in the almonds, melted chocolate and sifted flour, cinnamon and cloves, one at a time, until fully combined.
Whisk the egg whites with the salt until stiff peaks form. Gradually fold into the chocolate mix, being careful not to knock the air out. Once combined, turn out into a greased pudding bowl.
Steam for 2 hours, with water coming halfway up the sides of the bowl. Make sure the pudding bowl is securely covered.
