Spiced Cranberry Christmas Pudding recipe

Preparation Time: 30 minutes | Cooking Time: 90 minutes

This steamed twist on a Christmas pud is far from traditional - containing only a few spices and cranberries, rather than the traditional mix of dried fruit. It's light in texture with a fabulous gooey treacle flavour, perfect for serving with a light brandy sauce.


  • 225g whole fresh cranberries
  • 50g dried cranberries
  • 200g plain flour
  • 125ml treacle
  • 125ml hot water
  • 2 tsp. bicarbonate of soda
  • 1 tsp. mixed spice
  • 1/2 tsp. cinnamon
  • 4 tbsp. brown sugar
  • 1 tsp. vanilla extract


  1. Dissolve the bicarb in a little bit of the hot water, then keep adding the rest of the hot water until completely combined. Stir in the brown sugar, vanilla extract and the treacle.

  2. Sift in the flour, mixed spice and cinnamon and stir until combined, then fold in the fresh and dried cranberries. Turn out into a 1.5 litre greased baking dish.

  3. Place the mould into a steamer basket over simmering water. Cover and cook for 1 - 1 1/2 hours or until a skewer inserted into the centre of the pudding comes out clean. Cool for ten minutes or so and then turn out onto a plate to serve.

If you like, add some prepared chestnuts to the pudding mix to add a little texture to the pud, as well as a lovely Christmassy flavour. Recipe serves 6.
