This cocktail is decadent, but the spices and the alcohol give it a real kick. Serve it as dessert - or for afters!
- 250ml dark rum
- 250ml apple juice
- 250ml double cream
- 6 egg yolks
- 1 pinch each of cinnamon, ginger, nutmeg and cloves
- 3 tbsp. dark brown sugar
- 1 tsp. vanilla extract
Whisk the egg yolks in a bowl until pale and fluffy, then whisk in the cream, apple juice and rum.
Stir in the vanilla and sugar, and add the cinnamon, ginger, nutmeg and cloves.
Shake the cocktail over ice, or serve it in tall glasses over ice cubes. Recipe serves 6-8, or 12 if you want to serve it as a shot.
