In this yummy recipe, potatoes are fried with garlic, chillies, spices, yellow split lentils and a little lemon juice and then cooked until crisp. Perfect alongside grilled vegetables!
- 500g boiled potato
- 3 tbsp. split yellow lentils
- 4 garlic cloves
- 3 green chillies
- 2 tsp. cumin seeds
- 1 1/2 tsp. black pepper
- 1 tsp. fennel seeds
- 1/2 tsp. ground turmeric
- 1/2 tsp. dried chilli flakes
- 2 tbsp. lemon juice
- 2-3 curry leaves, finely chopped
Mince the garlic cloves. Slice the chillies in half and remove the seeds with the back of your knife and then finely dice. Dice the potato.
Heat some oil in a large frying pan and add the cumin seeds and fennel seeds. Fry for a minute, add the chillies and garlic and fry until lightly browned. Add the split lentils and fry for another 2 minutes.
Add the potatoes, then add the black pepper, turmeric, chilli flakes, some salt and the curry leaves and fry until golden and crisp.
To serve, sprinkle over the lemon juice and stir to combine.
