This spiced mangetout salad is perfect for serving with spiced meats and fish - or, you could bulk it out with rice or pasta for a lunchbox meal.
- 900g mangetout
- Good handful freshly chopped coriander
- Juice and zest of 1 lemon
- 1 large onion, peeled, thinly sliced
- 1 tsp. salt
- Pepper to taste
- 1 tsp. minced ginger
- 1 tsp. each ground turmeric and chilli powder
- 1/2 tsp. garam masala
- 3 tbsp. veg oil
Heat the veg oil in a large frying pan. Add the onion and cook gently for 15 minutes or so or until browned and sticky. Add the ginger, turmeric, chilli powder, garam masala, salt, pepper and lemon juice and cook out for 5 minutes or so.
Add the mangetout and cook for 2-3 minutes or until tender, then add the lemon zest and coriander to serve.
