Spiced Pear and Almond Cake recipe

Preparation Time: 15 minutes | Cooking Time: 50 minutes

Almond extract, ground almonds and slivered almonds give this cake a wonderful marzipan flavour, while the pears and apples keep it sweet and light. This cinnamon adds loads of flavour to the cake while the crispy coating gives it just a little extra flavour and texture.


  • 3 pears
  • 1 apple
  • 200g caster sugar
  • 150g plain flour
  • 3 eggs
  • 75ml milk
  • 50g ground almonds
  • 115g butter
  • 1 tsp. each cinnamon, baking powder and almond extract
  • 50g slivered almonds
  • 2 tbsp. brown sugar
  • 2 tbsp. caster sugar
  • 1 tsp. cinnamon


  1. Peel, core and dice the fruit. Preheat the oven to 180C and grease and flour a 23cm cake tin.

  2. Beat together the butter and sugar until smooth, pale and creamy. Beat in the eggs one at a time. Stir in the ground almonds and then sift in the flour, cinnamon and baking powder. Stir well and add the milk and almond extract. Fold in the fruit and slivered almonds.

  3. Pour the cake batter into the prepared cake tin. Mix together the brown sugar, caster sugar and cinnamon and scatter over the top. Bake for 40 to 50 minutes or until the cake tests done when a skewer is inserted into the centre of it. Leave to cool for 10 minutes, then turn out onto a wire rack.

If you like, omit the apple and add some blueberries or raspberries instead. You could also swap the cinnamon for ginger. Recipe serves 8.
