Spiced Toffee Pear Muffins recipe

Soft toffee and pears are baked in a caramel-flavoured muffin batter in this delicious recipe. They're perfect for breakfast, but they're also delicious when served with a cup of tea mid morning or at a party. Ice them with a rich fudgey icing for extra flavour.


  • 300g self-raising flour
  • 250ml milk
  • 100g butter
  • 100g soft toffee
  • 100g golden caster sugar
  • 2 eggs
  • 2 pears, peeled and cored
  • 2 tsp. ground cinnamon
  • 1 tsp. baking powder


  1. Preheat the oven to 180C and line a muffin tin with paper cases.

  2. Beat together the butter and sugar until pale and fluffy. Beat in the eggs one at a time. Sift together the flour, cinnamon and baking powder and stir it into the sugar mix in thirds, alternating it with the milk, until you have a just-mixed batter.

  3. Fold in the pear. Roughly chop the toffee and fold in. Spoon into the baking cases and bake for 25-30 minutes and then leave to cool for at least 20 minutes before serving.

If you prefer, omit the cinnamon and add a little almond extract or vanilla extract. Recipe makes 12.
