This unusual pasta dish is suitable for serving up for dinner for a big crowd and it's definitely suitable for the whole family. If you don't want to use the wine, simply omit it and use stock instead.

Ingredients

  • 4 turkey steaks
  • 500ml white wine
  • 6 mushrooms
  • 1 onion
  • Juice of one lemon
  • 1 pinch ground coriander
  • 1 pinch ground ginger
  • 1 pinch ground cinnamon
  • Salt and pepper
  • 1 tbsp. plain flour
  • 25g butter
  • 300g dried spaghetti

Directions

  1. Chop the turkey into chunks.

  2. Thinly slice the onion and the mushrooms. Place into a saucepan with the spices, lemon juice and wine. Simmer for five minutes, then leave to one side for an hour.

  3. Melt the butter in a pan and brown the turkey. Stir in the flour until fully incorporated, then stir in the onion and mushroom liquid, very gradually, stirring all the while so that the flour mixture incorporates with the liquid. Simmer the mixture for 15-20 minutes until the turkey is cooked through.

  4. Meanwhile, cook the pasta according to packet instructions. Put a few tbsp. of the pasta cooking water into the sauce, then toss the pasta into the sauce. Serve!

Sprinkle some freshly grated parmesan over the top of this dish for more flavour. This recipe serves four.
