Sprouts are cooked until tender, then stir-fried in a wonderful spicy combination of chilli, garlic, ginger and soy sauce. Serve this up with grilled chicken and for extra flavour, add a pinch of Chinese five spice.
- 500g Brussels sprouts
- 1 thumb-sized piece of ginger
- 1 red chilli
- 2 garlic cloves
- 2 tbsp. soy sauce
- 1 tbsp. sesame oil
Put the sprouts into a pot of boiling, salted water and cook for 3-5 minutes until tender but still al dente. Drain really well.
Meanwhile, slice the chilli in half lengthways and remove the seeds with the back of a knife. Thinly slice the flesh. Thinly slice the garlic cloves and slice the ginger into matchsticks.
Heat the sesame oil in a large wok and add the chilli, ginger and garlic. Stir fry for one minute over a medium-high heat or until fragrant. Add the sprouts, stir and fry for two minutes. Add the soy sauce and toss before serving.
