Spicy Stir-Fried Brussels Sprouts recipe

Preparation Time: 10 minutes | Cooking Time: 10 minutes

Sprouts are cooked until tender, then stir-fried in a wonderful spicy combination of chilli, garlic, ginger and soy sauce. Serve this up with grilled chicken and for extra flavour, add a pinch of Chinese five spice.

  • 500g Brussels sprouts
  • 1 thumb-sized piece of ginger
  • 1 red chilli
  • 2 garlic cloves
  • 2 tbsp. soy sauce
  • 1 tbsp. sesame oil

  1. Put the sprouts into a pot of boiling, salted water and cook for 3-5 minutes until tender but still al dente. Drain really well.

  2. Meanwhile, slice the chilli in half lengthways and remove the seeds with the back of a knife. Thinly slice the flesh. Thinly slice the garlic cloves and slice the ginger into matchsticks.

  3. Heat the sesame oil in a large wok and add the chilli, ginger and garlic. Stir fry for one minute over a medium-high heat or until fragrant. Add the sprouts, stir and fry for two minutes. Add the soy sauce and toss before serving.

For extra spice, you could even fry a little bit of curry powder in with the garlic, ginger and chilli. Recipe serves 4.
