Easy Squash, Tomato and Spinach Madras Curry recipe

Preparation Time: 10 minutes | Cooking Time: 25 minutes

This easy curry has only a handful of ingredients but delivers real big flavour. Squash, fresh tomatoes and spinach are simmered in an easy madras curry mix until tender, and that's it!


  • 1 small butternut squash
  • 5 medium fresh tomatoes
  • 100g spinach
  • 1 large onion
  • 1 tbsp. madras curry paste
  • 200ml veg stock


  1. Peel, deseed and dice the squash. Quarter the tomatoes and slice the onion into thin half moons.

  2. Fry the onion in a little oil until golden and tender. Add the curry paste and cook for a minute or until fragrant. Add the squash, tomatoes and stock and simmer for 15-20 minutes or until the squash is tender.

  3. Stir in the spinach and take the pan off the heat. Leave it to wilt for a few minutes. Season to taste.

If you like, you can use a different curry paste - try some korma curry paste and a little coconut milk in place of stock. Recipe serves 2.
