This easy curry has only a handful of ingredients but delivers real big flavour. Squash, fresh tomatoes and spinach are simmered in an easy madras curry mix until tender, and that's it!
- 1 small butternut squash
- 5 medium fresh tomatoes
- 100g spinach
- 1 large onion
- 1 tbsp. madras curry paste
- 200ml veg stock
Peel, deseed and dice the squash. Quarter the tomatoes and slice the onion into thin half moons.
Fry the onion in a little oil until golden and tender. Add the curry paste and cook for a minute or until fragrant. Add the squash, tomatoes and stock and simmer for 15-20 minutes or until the squash is tender.
Stir in the spinach and take the pan off the heat. Leave it to wilt for a few minutes. Season to taste.
