This easy fajita recipe is incredibly easy to make and even easier to eat - steak is marinated in lime, coriander and black pepper before being quickly cooked and served with onion and green pepper and wrapped in a floury, cooling tortilla. Serve with your favourite side dishes.
- 450g lean steak
- 6 flour tortillas
- 125ml fresh lime juice
- 1 onion
- 1 green pepper
- 2 lemons
- 2 tbsp. oil
- 1/2 tbsp. freshly ground black pepper
- 1 tbsp. freshly chopped coriander
- Salt and pepper
Slice the steak into thin strips.
Combine the lime juice, pepper and coriander in a shallow dish and add the steak into the marinade. Leave for two to four fours.
Finely slice the onion and julienne the pepper, removing the seeds.
Heat 1 tbsp. oil in a frying pan and fry the steak until cooked to your liking. Remove from the pan and set to one side.
Add the rest of the oil and the onion, frying until translucent and tender. Add the green pepper and steak and squeeze over the juice of one lemon. Cook for a minute or so until the green pepper is tender, then remove from the heat.
Serve the mixture on the tortillas, seasoned with salt and pepper and lemon wedges on the side.
