This healthy recipe involves red snapper, veggies and a few flavourful toppings such as ginger and garlic - the fish is steamed until soft and gently flaking, but it is full of flavour. Perfect for dinner parties.
- 450g red snapper fillets, boned
- 3/4 tsp. each salt and black pepper
- 1 tomato
- 2 mushrooms
- 1/2 carrot
- 1 tsp. dried red chilli flakes
- 1 tbsp. minced fresh ginger
- 1 tsp. minced fresh garlic
- 1 tbsp. soy sauce
- 1 dstsp. sesame oil
- Small handful freshly chopped coriander
- 2 spring onions
Thinly slice the mushrooms and carrot. Quarter the tomato.
Bring a couple of inches of water to the boil in a saucepan topped with a steamer basket. Place the fish into the steamer. Season the fish fillets with salt and pepper and top with ginger, chilli flakes, garlic, soy sauce and sesame oil. Nestle the mushrooms, carrot and tomato around the fish.
Steam for 15 minutes or until flaking. Thinly slice the spring onions on the diagonal and use to top the fish, along with the fresh coriander.
