This sticky five spice chicken is just delicious - it's wonderful on the BBQ but is just lovely baked in the oven, too, as the chicken turns wonderfully sticky due to the brown sugar in the spice mix.
- 900g chicken pieces, bone in, ready to cook
- 3 tbsp. veg oil and soy sauce
- 2 tbsp. each sherry, minced ginger, Chinese 5 spice, dark brown sugar
- 2 shallots
- 4 garlic cloves
- 1 red chilli
- 1/2 tsp. each star anise and salt
Put veg oil, soy sauce, sherry, ginger, 5 spice, sugar, shallots, garlic, chilli, star anise and salt together in a food processor and pulse until finely chopped together.
Pour over the chicken. Toss to coat, then cover. Leave to marinate for an hour or two.
To cook, either oven bake or grill until the juices of the chicken run clear. Best nibbled off the bone.
