This simple meal is made entirely from ingredients you'll find in your storecupboard, making it cheap and absolutely perfect for when you want to feed a crowd. Noodles are tossed with a spiced tomato sauce and prawns - easy as that! Recipe serves 4.
- 1 x 400g tin chopped tomatoes with garlic
- 500ml chicken stock
- 1 onion, finely sliced
- 1 tbsp. tomato puree
- 1 tbsp. coriander puree
- 1 tbsp. vegetable stock powder
- 1 tsp. crushed dried chillies or more to taste
- 400g frozen prawns
- 125g Chinese egg noodles
- 2 tbsp. oil
Heat the oil in a wok. Add the onion, coriander and dried chillies. Add just 1/2 tsp. or so now - you can add more later. Stir fry for 5 minutes until the onion is softened.
Add the tomato puree and fry for 1 minute, then add the tomatoes, chicken stock, and vegetable stock powder. Season to taste then simmer for 15 minutes until thickened slightly. Meanwhile, pour boiling water over the noodles in a bowl and leave to soften.
Add the prawns and softened noodles to the sauce then simmer until the prawns are cooked through. Add more chilli flakes and seasoning to taste.
