Strawberry and Biscotti Parfait recipe

Preparation Time: 30 minutes

This soft-set Italian dessert is flavoured with strawberries, sweet dessert wine and vbiscotti biscuits. Perfect served with a fresh fruit salad and sparkling wine after a summer meal.


  • 250g biscotti biscuits
  • 285ml double cream
  • 250g mascarpone
  • 100ml dessert wine
  • 400g strawberries, hulled and halved
  • 50g golden caster sugar


  1. Crush the biscuits until broken up but still a little bit chunky. Pour over the wine and stir to combine. Mash half the strawberries with the sugar in another bowl using a fork.

  2. Whip the mascarpone, then fold in the cream. Spread half of the biscuits in the bottom of a 1 litre pudding bowl, then top with half of the mashed strawberries and half of the mascarpone. Repeat. Layer the rest of the strawberries on top.

  3. Chill and serve cold.

If you like, drizzle some melted chocolate over the biscuit layers to make this pud extra decadent. Recipe serves 6-8.
