This soft-set Italian dessert is flavoured with strawberries, sweet dessert wine and vbiscotti biscuits. Perfect served with a fresh fruit salad and sparkling wine after a summer meal.
- 250g biscotti biscuits
- 285ml double cream
- 250g mascarpone
- 100ml dessert wine
- 400g strawberries, hulled and halved
- 50g golden caster sugar
Crush the biscuits until broken up but still a little bit chunky. Pour over the wine and stir to combine. Mash half the strawberries with the sugar in another bowl using a fork.
Whip the mascarpone, then fold in the cream. Spread half of the biscuits in the bottom of a 1 litre pudding bowl, then top with half of the mashed strawberries and half of the mascarpone. Repeat. Layer the rest of the strawberries on top.
Chill and serve cold.
