This sweet, spicy and savoury jam is perfect served with a platter of cold meats, strong cheeses and crackers. It's a bit unusual, but one taste and you'll be hooked.
- 300g strawberries, hulled and chopped
- 250ml sweet red wine
- 1 1/2 tbsp. grated ginger
- 220g dark brown soft sugar
- 1 cinnamon stick
- 1 green chilli, whole
- 1 good pinch crushed dried chilli flakes
- 2 tbsp. cider vinegar
- 1 tsp. salt
Stir the strawberries and red wine together and leave to sit for 10 minutes.
Add to a saucepan. Bring to the boil and once boiling, add the ginger, sugar, cinnamon, chilli, chilli flakes, cider vinegar and salt. Boil over a medium heat until thickened, stirring every 10 minutes or so. Spoon into sterilised, clean jars and then seal.
