Just throw everything into a blender and spoon into a cake tin in this easy peasy torte recipe, with a layer of soft sweet strawberries in the middle. Serve with a dollop of whipped cream.
- 175g each butter, ground almonds, self-raising flour and golden caster sugar
- 1 tsp. ground cinnamon
- 1 egg + 1 egg yolk
- 450g strawberries, hulled
Slice the strawberries. Put the butter, almonds, flour, sugar, cinnamon, egg and egg yolk into a blender and whiz until just combined.
Butter and line a 23cm loose-bottomed cake tin. Spoon 1/2 of the mix in a cake tin and smooth the top. Layer the strawberries on top in a single layer, then spoon the rest of the cake mix over the top. Spread out.
Bake the cake at 160C for an hour, covering with foil if it browns too quickly. Serve warm.
