Strawberries and lemons flavour this delicious loaf cake - moist, dense and packed with fruit, it makes a fantastic treat for breakfast or as a mid-morning snack with a cup of tea.
- 200g plain flour
- 1 1/2 tsp. baking powder
- 1 large pinch salt
- 150g strawberries, hulled, chopped
- 200g caster sugar
- 120ml milk
- 2 eggs
- Juice and zest of 1 lemon
- 75g unsalted butter, softened
Preheat oven to 190C and grease and line a large loaf tin.
Beat butter and sugar together until pale and fluffy. Beat in the eggs one at a time, then beat in the lemon juice and zest. Sift in the flour, baking powder and salt and stir to combine, then stir in the milk and fold in the strawberries.
Spoon into the loaf tin, then bake for 60-70 minutes or until a skewer inserted into the centre of the loaf tin comes out clean. Remove from the oven. Cool in the tin for 10 minutes, then turn out onto a wire rack.
